For reasons I don’t really want to divulge, Friday I gave 2 weeks notice at work. It was a fairly sudden move (though we had discussed it – Chad knew it was coming) and honestly, scary as hell. It meant we had to go on a budget ASAP and figure out what our essentials are, and if we could afford them. Thank goodness Chad starts his new job in just a couple of months – it’s going to be a tight few months!

Aside from some very cheap eating out this weekend (we ate out twice for $30, mostly since my sis and her BF were visiting), we lived our new lives of “living simply.” Our A/C is out, but that’s a good thing… we got to keep the windows open to this nice weather all week. I don’t think I mentioned it before, but our cable has been out since some idiot screwed it up about two months ago… we get 21 channels, none of them being ESPN… and it’s nice. We watch some netflix, but mostly we don’t watch TV at all. I started couponing (not the extreme stuff… no, I’m just into the “get this for cheaper” type) a few weeks ago and it’s strangely nice to have a little project. We’re cooking lots of stuff ourselves from scratch and reading more. I’m making a list of (cheap!) baby projects I want to tackle, planning our move and all kinds of other stuff. I planted herbs and lettuce in a container garden today, too!

The only unfortunate thing about my new less-stress life is that we won’t be going to Charleston as much now – that gets expensive! – but that trade-off is well worth the things we’ll get in return… and Skype is free πŸ™‚

I didn’t feel like being only a baby blogger. No, no, no. Well, that wasn’t the only reason I considered leaving this blog. Do you know what it’s like to work on a wordpress site all day then come over here and write and edit a blog? So tired of the blue/gray scheme here. And the way the buttons change shape depending on what browser you use. And just about everything else, really.

So Chad’s going through his interviews for two separate companies this week. It’s frightening how quickly the first is giving him an answer… on Monday! If it’s for the location that we would prefer (Atlanta) and the benefits are better than company 2, our choice is made.

Except… well, we had decided that we didn’t want to buy a house. Honestly, we really have no right buying a house. We’re barely out of college, about to have a kid, I have student loans and a job that isn’t considered “mortgage-worthy.” So what does this mean? We’re looking for rental houses.

Have you seen rental houses? They suck! I don’t know if it’s the time of year or what, but it’s been hard finding one that we like. Depending on where we go, we need to put a deposit down by the end of next month… that really puts the time crunch on. And I am getting more, and more, and more frustrated!

I haven’t posted in a while… I know, it’s so random. I’ve been crazy busy with… well, I can’t say housework. We’ll go with “buying random crap off the internet”

Chad got two second interviews today, for over spring break! We’re obviously pulling for whichever company likes him more and wants to offer him a job. πŸ™‚

So yeah.. we could be moving to NC or Cincinnati for real! Or… you know, staying in the Atlanta metro, as we found out. Ha. Not that I’d mind now. We’re going out to Farm255 tonight to celebrate this… it’s an amazing step forward in our lives.

Oh, and another step forward: we’re having a baby sometime around the first week of September!

summer is here, and man is it nice!

the veggies are growing up nicely. we used our first green onions and basil yesterday at Kit’s for dinner, and it was awesome πŸ™‚

Now, I realized I have not posted a good recipe on here in a while, and that is unfortunate because I am constantly cooking up new concoctions. We were at Ingles today and baby back ribs were on sale, so we got some. Let me tell you how we’re cooking Baby back ribs our way!

Baby Back Ribs with homemade BBQ Sauce:

1/2 rack of ribs (feeds two)
garlic powder
worcestershire sauce
olive oil
2 cloves garlic (large), minced
sliced onion (3-4 large slices)
minced onion

First things first, pull out your slow cooker. Throw the ribs in there (a half rack should fit) and sprinkle with salt, pepper and about a tbsp of worcestershire sauce, then top with the onion slices. I also threw mine in with a little garlic powder, but thats optional.

While that’s cooking, put olive oil, minced onion (1 tsp or so) and minced garlic in a saucepan on high. Let them cook down about 2 minutes, then throw in some seasoning salt and some worcestershire sauce (about 2 tbsp). Then let that cook for about 1 more minute before adding tomato sauce, about 3 tbsp of sugar and a pinch of cayenne and stir it up. Cook on low for about 15 minutes.

After the pork is done (3-4 hours on high), turn on your broiler. Brush the sauce all over the now tender ribs and broil them about two minutes on each side.

As I sit here, looking for a job for the summer or for the rest of the year and into next year, I’m finding something: there are getting to be more jobs out there (a good thing) but I’m not getting any calls back! It’s pretty frustrating, I’ve applied so many times to so many different places and nothing. I just hope that things get better soon! Nathan told me I’d get a job today, haha, so hopefully something will happen.

I’m going home to charleston tomorrow and I’m not sure what to do about all my plants! grr. I guess I could have nathan come over and water them… i’d ask kit but its kind of a drive for her if she’s not already at the reserve and i’d feel bad making her drive over here. I could just water them a ton and they could be good until saturday… it IS supposed to rain all week.

hmm. things to think about. another “things I like” coming soon .

Having a bad cold is not fun at all. I’ve been going back and forth from coughing up a lung to feeling great… it’s kind of weird. I have all this built up energy from the weekend of rest so I cleaned up the entire kitchen, did all the dishes and organized the recycling bin.

Now i’m attempting to study while watching american idol. I’m about 1/3 of the way done with it, but man, philosophy just isn’t that fun.

I feel so motivated tonight, but not to study. (To be fair… I also feel like I already know what I’m studying, too.) And I really want some sweet tea and I’m about to make that, I don’t know why but I’ve been thinking about it like so much today, haha. Looking forward to some sweet tea.

I might go ahead and apply for some more internships for this summer.

Before I go, recipe for some of the hors d’oeuvres i’m thinking of bringing to the superbowl party saturday…

1 small loaf pumpernickel or whole grain crackers
1-2 cucumbers
1 tub chive and onion cream cheese
1 tsp dill

Smear cream cheese on crackers/bread, top with slice of cucumber and sprinkle on a bit of dill.

It’s healthy and delicious! πŸ™‚

so I finally broke down and bought a “slow cooker,” otherwise referred to as a (brand name) “Crock Pot.” I just got a cheapo one at Walmart for $15… it’s a 5 quart one! I was impressed at the price.

And boy did I hit up the post-post-christmas sales at target. $2/pair socks for $.74, $9.99 2 pk of seamless undies for $2.84 (and another three pack of cotton for same price), $4.99 chenille gloves for $1.24, the same price as the crappy ones! Hmm. They had a gorgeous light coat for spring, it was green plaid. Too bad I wouldn’t be able to use it for like 3 months here! Brr! It froze over last night.

I finally organized my crafting stuff. And in the past month, I’ve gained 7 ink pads, and a bunch of stamps. My craft stuff is so cute and organized, I’ll take a picture and post soon. I can’t believe so much of it fit on my shelves, and then the rest ended up fitting under my desk, bed and in my closet.

I picked up a bunch of scrapbooking stuff at target, too, from the $1 section. You can get great deals there–I got a teal ink pad that seems to work pretty well, and a bunch of stickers (it’s hard for stickers to not work well… you can always glue them). I also found a bunch of stuff from Dollar Tree and Big Lots to flesh out my collection for now… have a lot of pictures to print before I can get back to doing more scrapbooking and painting.

Also, great deals going on at World Market post christmas. I got 5 blown glass rubber duck ornaments for $3, and plain wrapping paper (not christmas-y) for $2; it came with some cute paper tags that I can use for scrapbooking, and some raffia.

I started my new job last week, and I really like it. I have a couple of cute kids I tutor, and they seem to be pretty good readers and fast learners.

And to anyone: I know beans and rice is a really cheap meal, but isn’t it good? I’m making ham, beans and rice for dinner because of my crock pot. Haha! I’m sure it will turn out well, and who knows, maybe it will get regular rotation. The whole thing costs less than $5 for three people! πŸ™‚

sorry. i’ve been so busy with the end of the semester, holiday shopping and whatnot…

and guess what?

I GOT A JOB! I work for the America Reads program starting next semester. It’s 10 hours a week, 5 on site and 5 for lesson plans… basically, iΒ work with kids after school to teach them how to read.Β Also, i’m taking 19 hours next semester… haha. i guess we’ll see how it goes! I know it will be hard, but I really want to get things done.

in other news… i dont really have much! maybe that’s why i haven’t written. just been so busy and so tired!

So I tried posting this earlier but it screwed itself up. So here it goes again, in short form.

I’ve been doing some intense thinking lately, about what exactly I plan to do with my degree once I get the “heck out of dodge,” so to speak. I kept thinking I wanted to do marketing, but it turns out that marketing might not be exactly what I want to do.

Because the more I thought about it, the more I thought about how much I love government. I know, it sounds weird (because even though it’s me, I still agree that it sounds weird) but I do. Don’t get me wrong, I don’t approve of a huge government, but let’s face it–there are a lot of things we need government for, and as long as it’s going to stay huge, I might as well embrace it.

So I can’t wait to move to DC. And i’m scared that I’ll never want to leave, too.
