• 4 russet potatoes, small
  • 4 tbsp water
  • 2 tbsp butter spread (I use a heart healthy one)
  • 1/3 cup half and half
  • 1 tsp herbes de provence
  • 3 strips bacon, cooked and crumbled
  • 1/3 cup 2% milk cheese
  • salt and pepper to taste

Wash and quarter the potatoes. Put them into a microwave safe bowl (I usually use glass) and add water; cover. Microwave for 13-15 minutes and pull out; mash with skins still on. add all other ingredients, one by one, and let sit for 15 minutes. Stir to make sure herbes flavors are combined. Serve with a dollop of light sour cream or greek yogurt!
